will beの主語がわかりません

問題集に「Articles can be about anything you think will be of interest to other readers」という文がありました。意味は「記事は、ほかの読者の皆さんが関心を寄せると思われていることであればどんな内容でもかまいません」なのですが、will beの主語は何なのでしょうか。anythingを先行詞とする主節の関係代名詞thatが省略されているような気がするのですが、主節の関係代名詞は省略できないと思うので、どう解釈すればいいのかわかりません。

質問者です。質問では「主節の関係代名詞」と書いてしまいましたが、「主格の関係代名詞」の誤りです。「I think」などが挿入された形（連鎖関係詞節）では関係代名詞が主格であっても省略可能ということですね。ありがとうございました。

Articles can be about anything you think will be of interest to other readers.

Articles can be about anything (that/which) = you think = will be of interest to other readers.

If you think the article is about something that will be of interest to other readers, anything is fine.
