受験英語の相談です。

慣用表現ではないです。「今日たくさん話したね」と言うとき、次のように言います。

Today we talked so much.

much の比較級は more、最上級は most です。

比較級の例
Today we talked more than yesterday.

最上級の例
Today we talked the most in a long time.

上の文で、talk は自動詞、the most は副詞句です。しかし、talk を他動詞、the most をその目的語の名詞句のように見なすことがあります。この解釈には、違和感を持つ人と持たない人がいます。 …(1)

the most を名詞句とするなら、ご質問の文のような、

This is the most that …

という形が可能になります。関係代名詞 that で、the most を修飾します。

This is the most that we have talked in a long time.

この that はよく省略します。省略したのがご質問の文です。

上記 (1) について、私は違和感を持ちます。なので、私はこのような言い方はしません。次のように言います。参考まで。

It has been a long time since we talked so much.

We have not had this much to say to each other in a long while.

This is the longest conversation we have had in quite some time.
