日本語訳は、これと同じような意味であれば、多少違っても良いです。
ご質問の文にある「that」は、「so」と同じ意味です。私が想像するに、その「that」の意味を知っているかどうかを問う目的も含めた英語の問題ではないでしょうか。
ご質問から外れますが、私はこのような英文が、日本の英語学習に使われていることを、とても残念に思います。
実生活で、このような失礼なことを言うことはありません。本を書くくらいの文才を持った相手に対して、「お前の本はあまり興味深くない」などと言い放つ人は、ろくな人間ではないように思います。筆者の心を傷つけようとする悪意が感じられます。
それに、「not so interesting」という評価は、すごく漠然としています。おそらく日本語の「あまりおもしろくない」の感覚で、「not so interesting」としたのでしょう。本の感想を述べるのなら、普通はもっと具体的な言葉を使います。筆者を相手にして述べるのなら、なおさら慎重に言葉を選びます。
ご質問の文は、相手に対する心配りが無い、ぶっきらぼうな表現です。使用頻度は限りなくゼロに近いので、英語学習にふさわしくありません。早く忘れてほしいです。

細かく言うと、The book (which/that was)written by you is not that(thatは副詞で、それほど、そんなにという意味。形容詞 interesting を修飾している) interesting. ()内が省略されてると考えてみるとよいです。

The book が先行詞になりますが、本なので「もの、こと」になりますよね。「もの、こと」の場合、関係詞はwhich かthatになりますので、(which / that was written )「本が書かれた」が省略されているのです。
