文章量 を英語に訳すと？
例えば、１ページの文章量が少ないと言いたいとき、どのように言えばよいでしょうか。

私は amount of (量) というより、number of (数) と言います。また、ご質問の「少ない」というのは appropriate (適切な) と異なりますが、どちらでしょうか。一応、両方とも書いておきます。

number of (数) は amount of (量) に置き換えても問題ありませんが、amount of は不可算名詞の前に使われることが多いです。quantity of は可算名詞にも不可算名詞にも使えますが、実在する物に使います。文には使えません。
あと、細かいことですが、「１ページあたり」というニュアンスなら each page ですが、「どのページも」なら every page がいいでしょう。
