with the door closing を使った例文がうまく見つけられなかったのですが、with the door closing と聞けば、「ドアが閉まるという動作を繰り返している」でも「ドアが閉まろうとしている」でもなく、the door が close する動作のことを言っている、つまり「ドアが閉まることについて」と言っている感じがします。
We have an issue with the door closing.（私たちはそのドアが閉まることについて問題を抱えている＝つまり、私たちはそのドアが閉まらなくて困っている。）
The hanger does not interfere with the door closing.（そのハンガーはそのドアが閉まることの邪魔にはならない。）

with the door closed であれば、もうその動作が終わって、閉まった状態になってるんだな、って思えます。
