なぜ their が使われているのか
I've become something of an expert in reading body language, actually. It can tell me more about the candidate than the factual information on their resume. Believe it or not, a candidate's approach, handshake and overall body language can make the difference in the outcome of their interview.
二文目と三文目ついてですが、なぜ candidate が、単数形なのに their が使われているのですか？
また、resume と interview が複数形でないのはなぜですか？

この文の their は"his or her"の代用として使われているからです。この文の the candidate は総称表現であって特定の候補者を表わしているわけではありませんから、性別が不定です。そのような「性別が不定・不明の単数人称代名詞」は以前は he or she (his or her, him or her)が使われていましたが、昨今はジェンダーニュートラルな言い換えとして they(their, them) が使われるようになっています。
そして、この文のtheir resume, their interview はそれぞれ the candidate's resume, the candidate's interview を指しているので単数形のままなんです。
ただ、この用法の they が主語になる場合、たとえ単数を表わすとしても述語動詞は複数形になります。"They is ～"とか"They has～"とかになるのはさすがに気持ち悪いからでしょう。
